Chicken and Butternut Squash Tostadas

Serves: 4


The perfect duo.




Ingredients



Chicken

  • 1 chicken breast

  • 1/4 cup FRESH IS BEST SALSA

Butternut Squash

  • 1/2 butternut squash, cubed

  • 1 tsp FRESH IS BEST TACO SEASONING

  • 1/4 tsp red pepper flakes

  • 1/2 tsp cumin

  • 1 tbsp olive oil

Jicama Slaw

  • 1 cup shredded red cabbage

  • 1/4 cup cilantro

  • 1/4 cup grated jicama

  • 1/2 lime, juiced

  • 1/4 tsp cumin

  • 1/4 tsp chili powder

  • salt and pepper, to taste

Toppings

  • Tostadas (use ready-made tostadas or make your own with corn tortillas)

  • refried beans

  • avocado slices

  • FRESH IS BEST SALSA

  • Queso Fresco cheese

  • cilantro

Directions

Chicken

  1. Preheat the oven to 350F. In an oven-safe dish, add chicken and top with Fresh is Best salsa. Bake till chicken can be shredded. Shred chicken.

Butternut Squash

  1. In a medium bowl mix butternut squash, olive oil, and spices. Place on a baking sheet and bake till tender.

Jicama Slaw

  1. In a medium bowl combine ingredients. Set aside.

Fry Tostadas (optional) only if using corn tortillas

  1. Fry the tostadas in olive oil until crispy or bake in an air fryer.

Toppings

  1. Heat refried beans.

  2. Assemble tostadas.

  • spread refried beans

  • top with chicken and butternut squash

  • add salsa

  • add jicama slaw

  • sprinkle with Queso Fresco

  • top with cilantro
